Seared Steak with Tomato Salad

This week, I’m going to share with you the last of the HelloFresh recipes. The Seared Steak with Tomato Salad recipe is another super simple recipe, but chocked full of flavor, and the colors are just beautiful!

Like all HelloFresh recipes, this recipe takes 30 minutes or less to prepare and cook. The only kitchen tools you will need are a knife, spoon, baking sheet, pan, bowl, and whisk.

  1. 12 ounce Top Sirloin
  2. 2 Tomatoes, sliced
  3. 1/2 Cucumber, peeled and sliced into thin half moons
  4. 1 Red Onion, thinly sliced
  5. 1/2 lb New Potatoes
  6. 1 spring Rosemary
  7. 1 bunch Chives
  8. 1 t White Wine Vinegar
  9. 2 Tbsp Dijon Mustard
  10. 3 Tbsp Olive Oil
  11. 1 Tbsp Butter
  1. Preheat the oven to 425 degrees. Fill a pot with cold water and add the potatoes and salt. Bring to a boil and cook for 15 minutes until potatoes can be pierced with a knife. Drain and reserve. Slice tomatoes and red onion, chop the chives and rosemary finely and peel the cucumber and slice into thin half moons.
  2. Season the steak with salt and pepper on both sides. Heat 1 Tbsp of oil in a pan over medium-high heat and when hot, cook for 1-2 minutes on each side to sear. Transfer to a baking sheet and put in the oven for 8 minutes for a medium-rare and 10 minutes for medium. Let rest for 5 minutes before slicing. Set the pan aside.
  3. Whisk the vinegar, mustard and some salt in a bowl for the dessing. Gradually whisk in the 2 tbsp of olive oil and set aside. Add the tomato, onion and cucumber to the bowl and toss and coat.
  4. Cut potatoes in half and in the pan, melt the butter over medium-high heat and cook the potatoes with the rosemary for 2 minutes until brown. Slice the steak, against the grain, into 1/2 inch slices.
  5. Divide the sliced meat between 2 plates. Serve the tomato salad and potatoes on the side. Sprinkle the chives on top.

    I love everything about seared steak, and tomatoes are one of my favorites too. What a great recipe, Melissa!
