Orzo Risotto with Buttery Shrimp

This week, I want to share with you another one of our favorite HelloFresh recipes; Orzo Risotto with Buttery Shrimp.

This recipe has very few ingredients, so be sure to use good, quality ingredients. It also comes together very quickly, so it’s great for a busy weeknight dinner.

Orzo Risotto with Buttery Shrimp

Ingredients
  1. 1/2 Shrimp, peeled and deveined
  2. 6 oz. Orzo
  3. 6 Asparagus
  4. 1 bunch Parsley
  5. 1 Lemon
  6. 4 oz White Mushrooms, washed and sliced
  7. 2 cloves Garlic
  8. 1/4 C Parmesan Cheese, grated
  9. 4 T Butter
Instructions
  1. Bring a pot of salted water to a boil. Cook the asparagus until tender, about 2 minutes. Take out with a strainer, reserving the water to cook the orzo. Run in cold water and set aside. Add the orzo to the boiling water and cook for 10 minutes, stirring occasionally, until al dente.
  2. Cut the asparagus into 1-inch lengths, discarding the ends. Chop the garlic and parsley and slice the mushrooms. Zest half the lemon and cut it into wedges.
  3. In a skillet, melt the butter over medium-high heat. Lower the heat and cook until the butter begins to brown. Add the shrimp, garlic and mushrooms, season with salt and pepper and cook over medium heat until the shrimp is pink and curled, about 1 minute per side. Add the asparagus and set aside.
  4. Drain the orzo, reserving 1/ cup of the cooking water. Return the orzo to the saucepan. Set the pan over high heat and add the deserved cooking water. Cook, stirring constantly, until creamy, about 2 minutes.
  5. Stir the asparagus and shrimp and cook until heated through. Remove from heat. Stir in the parsley, a pinch of lemon zest and half the Parmesan cheese. Season with salt and pepper.
  6. Transfer the orzo to 2 bowls and sprinkle remaining cheese on top. Serve with lemon wedges on the side.
