Foodie Friday – Beef Stroganoff

Foodie Friday – Beef Stroganoff
I love Beef Stroganoff, it always reminds me of my childhood. My mother made the best Beef Stroganoff. She didn’t make it often, because with 5 kids under foot it was tough to find the time, but when she did we’d fight over seconds.  When I got married and moved out, I asked for the recipe but she couldn’t find it. I’ve never found a recipe that even came close to hers, [...]

Foodie Friday – Buffalo Chicken Wraps

Foodie Friday – Buffalo Chicken Wraps
I love lettuce wraps, and I have a dozen different fillings for them. This time I’m using shredded baked chicken breast, Franks Buffalo Hot Wing sauce, and Marzetti Blue Cheese Dressing.   Buffalo Chicken Lettuce Wraps 2013-06-06 08:58:59 Write a review Save Recipe Print Prep Time 10 min Cook Time 30 min Total [...]

Lemon Basil Mayo

Lemon Basil Mayo
I love to cook, and I especially love simple recipes. Isn’t life too busy to wrestle with complicated dishes? Usually, if a recipe has more than a few simple ingredients, I move on to something else (unless it happens to be Thanksgiving Day). Although I don’t slather on the mayonnaise regularly, if I am cooking for a neighborhood party or a special family bar-b-que, this is my go-to recipe [...]

Shredded Beef Lettuce Wraps

Shredded Beef Lettuce Wraps
This is our favorite recipe for my leftover Simple Sunday Pot Roast. It’s great for those busy days when you need to throw something together quickly, but still want to serve something healthy. Instead of using sour cream we use plain Greek yogurt and Fage is my favorite brand. I use it in any recipe that calls for sour cream.  [...]

Simple Sunday Pot Roast

Simple Sunday Pot Roast
This is the pot roast I make when I plan to use the leftovers for Roast Beef Hash or Shredded Beef Tacos the next day. This particular roast will be served tonight with Al Fresco Green Beans and Mushroom Saute (recipe coming soon!) and red beans and rice. Tomorrow the leftover meat will become Shredded Beef Tacos. It’s a very easy recipe, and after cooking 8 hours on low in a crockpot, it melts [...]

Baked Sweet Potato Chips

Baked Sweet Potato Chips
This is another super simple recipe that just tastes so darn good. The key to this recipe is to slice your potatoes thin and then let them cook low and slow.  I like to use cumin, paprika, and sea salt (they are delicious!), but you can use any seasoning you prefer.  I hope you give them a try and let me know in the comments below how you seasoned yours. Happy eating!   Baked [...]

Crispy Zucchini Chips

Crispy Zucchini Chips
This week I’m adding a super quick and easy recipe for Crispy Zucchini Chips. They take a while to bake, but they are so worth the time. These delightful little treats are addictive and have completely replaced potato chips (with the exception of homemade sweet potato chips) for my go-to salty snack!  I hope you give them a try and let me know what you think of them in the comments below! Happy [...]
